So I figured out how to fill the days. I have been crocheting alot. Also I created a new cake recipe.
Molasses Spice cake; I took a very basic cake recipe for chocolate cake. Left out the coca powder and added Cardamom, Cinnamon and Molasses. I like it plain with a bit of butter on top. It is also good with a nice cream cheese frosting. In all it take the same amount of time as a box cake. I think.
So here is my recipe for Molasses Spice Cake
Ingredient:
1/2 cup butter softened (A tip from Martha: to soften the butter faster cream it in a separate bowl with beaters.)
2 cups + 1 tablespoon flour(I use whole wheat all purpose)
1 1/2 cups White or Cane sugar
1/2 cups brown sugar lightly packed
3/4 tsp each Baking Soda and Baking Powder (note: if you leave this out you will get a spice blondie)
1/2 tsp each Cinnamon, Cardamom and Vanilla (you can also add Allspice and/or Nutmeg)
2 tablespoons Molasses (grease the measuring spoon first and the Molasses slides right out)
1/2 to 3/4 cup milk (add 1/2 cup first then more if the batter is too dry.)
2 eggs
First; grease a 13x9x2 inch pan and then coat the pan with the tablespoon of flour this is very important as the batter is very sticky and will not release with out the flour on the bottom and side to act a a liner. You also could line the pan with parchment paper.
Preheat oven to 350 degrees
Then Using 1 large mixing bowl, combine all dry ingredients and whisk thoroughly (including brown sugar) Then dump in the wet ingredients. With a mixer mix all of the ingredient together until the batter is completely mixed and resembles ribbons. If it is too dry or stiff add the remaining milk a little at a time until it is ribbon like.
Next dump the batter into the prepared pan and level a little. Bake @ 350 for 30- 35 minutes.
You can also make the cake in 2 nine inch rounds or squares. I like to make one round and one square. I use the square as the base and put the round on top. With different colored frosting it is visually appealing.
